Fabulous Friday





It was a tradition that started like most traditions do, as a celebration only this one was one that we held every Friday. A kind of welcome-weekend-we're-glad-you're-here celebration. A simple breakfast that is out of the norm-something yummy-sugary, sometimes homemade, usually with chocolate chips.Something that the Mister can grab on his way out the door.


What began almost 9 years ago when we had 3 boys 4 and under is still going strong with our 4 boys almost 13 and under. I love traditions especially when they involve baking, boys and Fridays.

Our favorite Fabulous Friday is chocolate chip banana bread.


2 ripe bananas
1 egg
1 tsp salt
1 tsp baking soda
1 tsp vanilla
1 tsp baking powder
1/2 cup sugar
1 1/2 cups of flour (we use whole wheat pastry flour, but all purpose is good too)
1/2 cup butter (or oil-we use applesauce)
1 cup chocolate chips


Mix the bananas, eggs, butter (oil or applesauce). Pour in the sugar. Mix in the rest of the dry ingredients. Add the chocolate chips.


Pour into a greased loaf pan and bake on 350 for 30 minutes or until it is done on the inside. Enjoy! {By the way, I always double this recipe. Hot bread goes fast around my house, baby.}
